Barbecue - Barbeque - BBQ The word barbecue can be, and has an accepted spelling, in several different forms. "Barbecue" is one of the oldest American words, and has been found in English in the seventeenth century. Barbecue stems from the American Spanish barbacoa, which referred to a wooden grid. Technically, the word barbecue should be reserved for the process of slow cooking meat in vinegar based sauce. However, in actual use, the word barbecue is widely applied to any sort of open cooking. Although the usual spelling is barbecue, other commom variations include barbeque, and Bar-B-Q, as well as other forms.
